Thai Style New Potatoes
Vegetarian

500 g new potatoes, scrubbed (halved or quartered if necessary)
25 g butter
1 stick lemon grass, finely chopped
1-2 red chillies, deseeded and finely chopped
1 tsp root ginger, finely chopped
Salt and freshly ground black pepper
Handful of fresh coriander leaves

Cooking Time: 15 minutes

Serves 4 people

Method

  • Place the new potatoes in a pan of lightly salted boiling water.
  • Cover and simmer for 15 minutes or until tender.
  • Drain and allow to cool slightly.
  • Meanwhile melt the butter in a small pan, add the lemon grass, chillies and root ginger and fry gently for 5 minutes or until softened.
  • Toss the drained potatoes in the butter and season to taste and serve immediately, garnished with coriander leaves.
